This French Onion Meatloaf features a savory blend of caramelized onions and Swiss cheese enveloping ground beef for a comforting, flavorful dish that’s perfect for family dinners.

Ingredients

  • 4 large sweet onions (sliced)
  • 4 tablespoons unsalted butter
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon brown sugar
  • 2 pounds ground beef
  • 1 cup breadcrumbs
  • 1 teaspoon Italian seasoning
  • ½ cup whole milk
  • 1 large egg
  • 1 oz. packet Lipton onion soup mix
  • ½ cup red wine
  • 2 tablespoons Worcestershire sauce
  • 68 slices Swiss cheese
  • Fresh thyme (for garnish (optional))

Instructions

  1. Melt butter in a large skillet over medium heat. Add sliced onions, salt, pepper, and brown sugar. Cook for 25-30 minutes until soft and golden.
  2. Transfer caramelized onions to the slow cooker. Pour red wine and Worcestershire sauce over the onions.
  3. In a mixing bowl, combine ground beef, breadcrumbs, Italian seasoning, milk, egg, and onion soup mix. Mix well until combined.
  4. Shape the mixture into an oval meatloaf that fits inside the slow cooker.
  5. Place the meatloaf gently on top of the onion mixture in the cooker.
  6. Cover and set slow cooker to low, cooking for about 5 hours.
  7. After 5 hours, add Swiss cheese slices on top of the meatloaf and cover again. Cook for an additional 10 minutes until cheese is melted.
  8. Garnish with fresh thyme and let rest for 5 minutes before slicing. Serve with caramelized onions and sauce.

Notes

Feel free to substitute ground turkey for a lighter version.
For extra flavor, consider adding garlic or herbs to the onion mixture.
Letting the meatloaf rest before slicing helps maintain its shape.
