- 4 large sweet onions (sliced)
- 4 tablespoons unsalted butter
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon brown sugar
- 2 pounds ground beef
- 1 cup breadcrumbs
- 1 teaspoon Italian seasoning
- ½ cup whole milk
- 1 large egg
- 1 oz. packet Lipton onion soup mix
- ½ cup red wine
- 2 tablespoons Worcestershire sauce
- 6–8 slices Swiss cheese
- Fresh thyme (for garnish (optional))
Instructions
- Melt butter in a large skillet over medium heat. Add sliced onions, salt, pepper, and brown sugar. Cook for 25-30 minutes until soft and golden.
- Transfer caramelized onions to the slow cooker. Pour red wine and Worcestershire sauce over the onions.
- In a mixing bowl, combine ground beef, breadcrumbs, Italian seasoning, milk, egg, and onion soup mix. Mix well until combined.
- Shape the mixture into an oval meatloaf that fits inside the slow cooker.
- Place the meatloaf gently on top of the onion mixture in the cooker.
- Cover and set slow cooker to low, cooking for about 5 hours.
- After 5 hours, add Swiss cheese slices on top of the meatloaf and cover again. Cook for an additional 10 minutes until cheese is melted.
- Garnish with fresh thyme and let rest for 5 minutes before slicing. Serve with caramelized onions and sauce.
Notes
Feel free to substitute ground turkey for a lighter version.
For extra flavor, consider adding garlic or herbs to the onion mixture.
Letting the meatloaf rest before slicing helps maintain its shape.
