- 2 pounds london broil
- ¼ cup low-sodium soy sauce
- 1 tbsp. balsamic vinegar
- 1 tbsp. worcestershire sauce
- 1 ¾ cup beef broth, ¾ cup separated
- 1 tbsp. brown sugar
- ½ tsp. dried rosemary
- ½ tsp. dried thyme
- ¼ tsp. black pepper
- 1 tbsp. olive oil
- 1 medium onion, sliced
- 2 carrots, peeled and cut into chunks
- 2 potatoes, cut into chunks
- 4 garlic cloves
- 1 tbsp. cornstarch, optional, for thickening
Instructions
- Whisk together the soy sauce, balsamic vinegar, Worcestershire sauce, ¾ cup of beef broth, brown sugar, dried rosemary, dried thyme, black pepper, and olive oil in a medium bowl to create the marinade.
- Place the London broil in a resealable plastic bag or shallow dish and pour the marinade over it. Ensure the meat is well coated, then seal the bag or cover the dish, and refrigerate for at least 4 hours or overnight.
- Heat a skillet over medium-high heat and sear the London broil on all sides for 2-3 minutes each to lock in the flavors. Transfer the seared meat and marinade to the slow cooker.
- Arrange sliced onion, carrot chunks, potato chunks, and garlic cloves around the London broil in the slow cooker.
- Pour the remaining 1 cup of beef broth over the meat and vegetables, ensuring the liquid comes about halfway up the side of the meat.
- Cover and cook on low for 6-8 hours, or until the meat is fork-tender.
- Once cooked, remove the London broil and let it rest for 10-15 minutes before slicing against the grain.
- If desired, strain the cooking liquid, mix cornstarch with cold water to create a slurry, add it to the strained liquid, and boil until thickened.
- Serve the sliced London broil alongside the vegetables and drizzle with the savory sauce.
Notes
For enhanced flavor, marinating overnight is recommended.
Adjust the vegetables to your preference; add bell peppers or celery for variety.
