Ingredients
- 1 cup peeled cored, and chopped apples (½” pieces)
- ⅛ teaspoon ground cinnamon
- 1 tablespoon dark brown sugar
- 1¼ cups all-purpose flour
- ¾ teaspoons baking powder
- ¼ teaspoon kosher salt
- ½ teaspoon ground cinnamon
- ⅛ teaspoon ground nutmeg
- ½ cup unsalted butter melted
- ¾ cups dark brown sugar packed
- 1 large egg room temperature
- 1 teaspoon vanilla extract
- 1 cup powdered sugar
- ¼ teaspoon vanilla extract
- ½ teaspoon cinnamon
- 2 tablespoons milk
Instructions
- In a frying pan over medium heat, combine the chopped apples, brown sugar, and cinnamon. Cook for about 5 minutes, stirring occasionally until the apples soften. Transfer to a plate to cool.
- Preheat your oven to 350°F. Grease and parchment-line an 8×8” pan, leaving overhangs for easy removal later.
- In a large bowl, whisk together the flour, baking powder, kosher salt, cinnamon, and nutmeg until combined.
- In another bowl, whisk together the melted butter, brown sugar, egg, and vanilla extract until smooth.
- Add the wet mixture to the dry ingredients and gently fold until just combined. Incorporate the cooled apples and their juices until evenly mixed.
- Spread the batter into the prepared pan evenly. Bake for 18-22 minutes, or until the top is lightly browned—avoid overbaking.
- Allow the blondies to cool completely on a wire rack before adding icing.
Notes
For extra flavor, you can add chopped nuts or chocolate chips to the batter before baking.
Store any leftover blondies in an airtight container at room temperature for up to 3 days.
These blondies pair wonderfully with a scoop of vanilla ice cream or a dollop of whipped cream.
