Ingredients

  • ¼ cup unsalted butter frozen & grated
  • 1½ cups grated apple granny smith, gala, or pink lady
  • 2 cups all-purpose flour
  • ¼ cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon kosher salt
  • 1 large egg cold
  • ⅔ cup heavy whipping cream cold
  • ½ cup cinnamon sweet bits store bought or make your own
  • 1 cup powdered sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1–2 tablespoons milk

Instructions

  1. Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. In a bowl, combine the grated apple, flour, sugar, baking powder, and salt.
  3. Add the grated butter and mix until the mixture resembles coarse crumbs.
  4. In another bowl, whisk together the egg, heavy cream, vanilla extract, and cinnamon sweet bits.
  5. Stir this wet mixture into the dry ingredients until just combined.
  6. Turn the dough onto a floured surface and gently knead it a few times before shaping it into a disk about 1 inch thick.
  7. Cut the disk into 8 wedges and place them on the prepared baking sheet.
  8. Bake for 15-20 minutes until golden brown.
  9. Let cool slightly, then mix the powdered sugar, milk, and ground cinnamon to make a glaze, drizzling it over the warm scones.

Notes

For extra flavor, try adding nuts or raisins to the dough.
These scones are best enjoyed fresh but can be stored in an airtight container for a couple of days.
