- 2 1/2 cups old fashioned roll oats
- 1/2 cup walnuts, chopped
- 1 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 2/3 cup apple, peeled, cored & cubed
- 1/3 cup coconut oil, melted
- 1/4 cup maple syrup
- 1 tsp vanilla
Instructions
- Preheat oven to 325 degrees F and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the oats, walnuts, cinnamon, nutmeg, salt, and cubed apples.
- Add the melted coconut oil, maple syrup, and vanilla to the dry mixture.
- Stir well until the oats are fully coated with the mixture.
- Spread the granola evenly on the prepared baking sheet and press down with a spatula.
- Bake for 22-28 minutes, stirring halfway through the baking time.
- Allow to cool completely before breaking into clusters.
Notes
For added sweetness, consider adding dried fruit after baking.
Store in an airtight container for up to two weeks.
Make it gluten-free by using certified gluten-free oats.
