Ingredients
- 2 cups mixed berries, chopped
- ¼ cup granulated sugar
- 1 tbsp granulated sugar, for sprinkling
- 1 tablespoon cornstarch
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 sheet store-bought pie dough, chilled
- 1 egg, for egg wash
- optional: coarse sugar, for sprinkling
Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- In a bowl, mix together the mixed berries, ¼ cup of granulated sugar, cornstarch, lemon zest, lemon juice, and vanilla extract until combined.
- On a lightly floured surface, roll out the pie dough into a circle and transfer it to the lined baking sheet.
- Spread the berry mixture in the center of the dough, leaving about a 2-inch border.
- Fold the edges of the dough over the berries, pleating as you go, and press to seal.
- Beat the egg and brush it over the crust. Sprinkle with coarse sugar, if desired.
- Bake in the preheated oven for about 25-30 minutes, or until the crust is golden brown.
