This Brats & Sauerkraut dish combines savory bratwurst and tangy sauerkraut for a flavorful meal. It’s easy to prepare and ideal for a quick weeknight dinner or a tasty comfort food option.

Ingredients

  • 1 Tbsp. vegetable oil
  • 5 bratwurst
  • 16 oz. sauerkraut, well-drained
  • 2 large yellow onions, peeled and sliced into rounds
  • 2 garlic cloves, peeled and smashed
  • 1 tsp. mustard seeds
  • 1 tsp. caraway seeds
  • 2 bay leaves
  • 1 Tbsp. brown sugar
  • ¼ cup Dijon mustard
  • 12 oz. German lager or any lager/pilsner

Instructions

  1. Heat the oil in a skillet over medium-high heat.
  2. Brown the bratwurst on all sides for about 2-3 minutes per side, then set aside.
  3. Drain the sauerkraut and evenly spread it in the bottom of the slow cooker.
  4. Layer the sliced onions and smashed garlic on top of the sauerkraut.
  5. Sprinkle the bay leaves, mustard seeds, caraway seeds, and brown sugar over the onions and sauerkraut.
  6. Mix the Dijon mustard into the sauerkraut until well combined.
  7. Place the browned bratwurst atop the sauerkraut mixture.
  8. Pour the beer evenly over the bratwurst and sauerkraut mixture.
  9. Cover and cook on low for 6 hours or high for 3-4 hours, removing the bay leaves before serving.

Notes

For added flavor, consider using a smoky beer.
Serve with hearty rolls for an authentic touch.
Feel free to add additional toppings like mustard or onions.
