Ingredients

  • 1 lb lean ground beef
  • 1 medium onion, chopped
  • 2 teaspoons minced garlic
  • 1 tablespoon worcestershire sauce
  • 1 teaspoon italian seasoning
  • 1 teaspoon beef better than bouillon
  • ½ teaspoon crushed red pepper flakes, optional
  • 1 (14.5 oz) can petite fire roasted tomatoes
  • 34 small zucchini, cut into quarter pieces
  • 1 cup shredded mozzarella cheese

Instructions

  1. In a large skillet over medium heat, brown the ground beef with the onion, breaking it up until no longer pink. Drain excess grease if needed.
  2. Add garlic, Worcestershire sauce, Italian seasoning, beef bouillon, red pepper flakes, and tomatoes (do not drain). Simmer for 5 minutes, stirring occasionally.
  3. Incorporate zucchini and simmer for an additional 10 minutes until slightly softened.
  4. Sprinkle shredded mozzarella on top, reduce heat to low, cover, and cook for 3-5 minutes until cheese is melted. Serve immediately.

Notes

Feel free to substitute ground turkey for beef for a leaner option.
Add other vegetables such as bell peppers or mushrooms for more variety.
Adjust the crushed red pepper flakes to your spice preference.
