- 9–10 oz. romaine lettuce, chopped (approximately 5 cups)
- 1/2 cup shredded parmesan cheese
- 1 cup croutons
Instructions
- In a medium bowl, whisk the egg yolk, Dijon mustard, and lemon juice until frothy.
- Gradually drizzle the olive oil while whisking vigorously until the mixture thickens.
- Mix in the anchovy paste, grated parmesan, garlic, Worcestershire sauce, and black pepper. Adjust salt to taste and set aside.
Notes
For a creamier dressing, increase the amount of olive oil.
