Ingredients

  • 910 oz. romaine lettuce, chopped (approximately 5 cups)
  • 1/2 cup shredded parmesan cheese
  • 1 cup croutons

Instructions

  1. In a medium bowl, whisk the egg yolk, Dijon mustard, and lemon juice until frothy.
  2. Gradually drizzle the olive oil while whisking vigorously until the mixture thickens.
  3. Mix in the anchovy paste, grated parmesan, garlic, Worcestershire sauce, and black pepper. Adjust salt to taste and set aside.

Notes

For a creamier dressing, increase the amount of olive oil.
