- 2 ½ lbs bone-in chicken thighs
- 2 Tbsp. cooking oil
- 1 ½ lbs. Yukon gold potatoes, diced
- 1 lb. green beans, ends snipped
- 2 garlic cloves, minced
- 8 oz. can tomato sauce
- 1 ½ tsp. salt
- ¼ tsp. pepper
- ½ tsp. dried thyme
- ½ tsp. dried rosemary
Instructions
- In a pan over medium-high heat, add cooking oil and brown the chicken thighs on both sides.
- Place diced potatoes and green beans in the bottom of the slow cooker and mix them together.
- Layer the browned chicken thighs over the potatoes and green beans. Add minced garlic and drizzle with tomato sauce. Sprinkle with salt, pepper, thyme, and rosemary, then mix to integrate the seasoning with the sauce.
- Cover the slow cooker and cook on HIGH for 4.5 hours without opening the lid to ensure tenderness of the potatoes.
- Serve hot and enjoy your meal!
Notes
For added flavor, marinate chicken thighs with spices before browning.
You can substitute green beans with your choice of vegetables like carrots or peas.
