- 6 ears corn, husk and silk removed
- 4 tablespoons softened butter
- salt and pepper, to taste
- 1 cup cilantro lime crema
- cilantro, for garnish
- Tajin, for garnish
- crumbled cotija cheese, or queso fresco, for garnish
Instructions
- Preheat the oven to 400°F.
- Arrange the corn on a large baking sheet and coat each ear with softened butter. Season with salt and pepper to taste.
- Roast the corn at 400°F for 20 minutes. If desired, for the last 2 minutes, turn on the broiler and watch carefully while rotating the corn until charred on all sides.
- Take the corn out of the oven and generously spread cilantro lime crema over the roasted ears. Add your chosen toppings and serve. Enjoy!
Notes
For extra flavor, try adding lime zest to the crema before spreading it on the corn.
Feel free to add any additional toppings like diced avocado or jalapeños for a spicy kick.
