- 2 medium zucchini, sliced
- 2 cups panko breadcrumbs
- 1/2 tsp salt
- 1 cup flour
- 3 eggs, beaten
- oil for frying
Instructions
- Heat oil in a large skillet.
- Slice zucchini into 1/4" rounds and set aside.
- Whisk together breadcrumbs and salt.
- Put flour into a shallow plate. Beat eggs in a shallow bowl.
- Dredge each zucchini round through the flour, dip into beaten eggs, then dredge into the breadcrumb mixture.
- Fry zucchini rounds until golden brown on both sides, repeating until all zucchini slices are breaded and fried.
Notes
Make sure the oil is hot enough before frying to achieve a crispy texture.
You can experiment with different seasonings in the breadcrumb mixture for added flavor.
For a healthier version, consider baking the zucchini instead of frying.
