Ingredients

  • 2 medium zucchini, sliced
  • 2 cups panko breadcrumbs
  • 1/2 tsp salt
  • 1 cup flour
  • 3 eggs, beaten

Instructions

  1. Heat oil in a large skillet.
  2. Slice zucchini into 1/4" rounds and set aside.
  3. Whisk together breadcrumbs and salt.
  4. Put flour into a shallow plate. Beat eggs in a shallow bowl.
  5. Dredge each zucchini round through the flour, dip into beaten eggs, then dredge into the breadcrumb mixture.
  6. Fry zucchini rounds until golden brown on both sides, repeating until all zucchini slices are breaded and fried.

Notes

Make sure the oil is hot enough before frying to achieve a crispy texture.
You can experiment with different seasonings in the breadcrumb mixture for added flavor.
