Ingredients
- 3 lb (1400g) apples (fuji, gala, honeycrisp, red delicious or similar)
- ½ cup (100g) granulated sugar
- ½ cup (100g) packed brown sugar
- 1 tablespoon cinnamon
- 1 teaspoon vanilla
- ¼ teaspoon salt
Instructions
- Slice and core the apples, leaving the skin on if preferred, and cut them into small chunks.
- Place the apple chunks in the bottom of a 7 qt slow cooker. Sprinkle both types of sugar and cinnamon on top, then toss to combine.
- Cover and cook on high for 3-5 hours, stirring after 2 hours, until the apples become translucent; this usually takes about 4 hours.
- Once cooked, use a hand blender to puree the apples and their juices until smooth. If using a regular blender, blend in batches while ensuring the lid is cracked to avoid pressure build-up from the heat.
- After blending, return the mixture to the slow cooker and continue cooking on high with the lid slightly ajar for 30 minutes to an hour until achieving the desired thickness.
- Finally, stir in salt and vanilla, let the apple butter cool, and transfer to jars or freezer containers. For longer storage, consider canning. Otherwise, keep refrigerated and use within two weeks.
Notes
Different apple varieties can alter the flavor; feel free to mix types for complexity.
For a spice variation, add nutmeg or cloves to the mixture before cooking. Adjust the sugar level according to the sweetness of the apples used.
