Ingredients

  • 1 lb. ground beef
  • 16 oz. Velveeta cheese
  • 20 oz. Rotel diced tomatoes with green chiles
  • 2 tsp. chili powder
  • 1/4 tsp. garlic powder
  • corn chips
  • chopped cilantro, optional

Instructions

  1. Cook the ground beef in a large skillet over medium-high heat until browned and crumbled, then drain the fat.
  2. Transfer the cooked beef to the slow cooker and cube the Velveeta cheese, adding it on top of the beef.
  3. Pour the undrained Rotel tomatoes over the mixture and sprinkle with the chili and garlic powder.
  4. Stir everything together and cover the slow cooker.
  5. Cook on HIGH for 2 hours, until the cheese is fully melted and the dip is heated through.
  6. Keep on warm and stir occasionally as it sits to prevent sticking.

Notes

For added flavor, consider including some chopped jalapeños.
Serve with corn chips or your favorite dippers for the best experience.
Feel free to adjust the spice level by adding more or less chili powder.
