- 2 packages (5.3 oz each) Boursin
- 1–1/2 cups chopped de-seeded tomatoes
- 1/4 cup packed fresh basil leaves, chopped
- 1 tablespoon extra virgin olive oil
- 1 tablespoon balsamic vinegar
- 1 clove garlic, pressed or very finely minced
- salt and pepper to taste
- balsamic reduction (Alessi brand recommended)
- crackers or crostini
Instructions
- Allow the Boursin to sit at room temperature for 15-20 minutes to soften.
- In a small bowl, mix the chopped tomatoes, basil, olive oil, balsamic vinegar, garlic, salt, and pepper. Let sit for 5 minutes to allow flavors to meld.
- Spread the softened Boursin into an even layer in a shallow serving dish.
- Top the Boursin with the bruschetta mixture, leaving the juices behind in the bowl.
- Drizzle the dip with balsamic reduction and garnish with fresh basil. Serve with crackers or crostini.
Notes
Using vine-ripened or Roma tomatoes enhances flavor.
Balsamic reduction can be drizzled over salads as well.
Serve immediately for the best taste and texture.
