- 1 ½ pounds boneless skinless chicken breasts
- 1 tablespoon jarred minced garlic
- 2 teaspoons italian seasoning blend
- 1 cup chicken stock
- ½ cup sun-dried tomatoes
- 2 tablespoons cornstarch or tapioca flour
- ½ cup heavy cream
- ¼ cup grated parmesan cheese
- 2 cups fresh spinach
- optional ¼ cup chopped fresh basil or parsley for garnish
Instructions
- Cut the chicken into approximately 4-ounce pieces and place them in the slow cooker with garlic, italian seasoning, chicken stock, and sun-dried tomatoes.
- Cover the slow cooker and cook on high for 2-3 hours or low for 4-6 hours until the chicken reaches an internal temperature of 165°F.
- Mix the cornstarch with 2 tablespoons of water to form a slurry, then add it to the slow cooker along with heavy cream, parmesan cheese, and fresh spinach.
- Let the mixture heat through for an additional 30-45 minutes.
- Serve over rice, noodles, mashed potatoes, or your preferred side.
Notes
For added flavor, marinate the chicken in the seasoning overnight.
Adjust the consistency of the sauce by adding more or less cream according to preference.
Serve with freshly baked bread to soak up the delicious sauce.
