- 2 tbsp Brown Sugar
- 2 tsp Pumpkin Pie Spice
- 1 tsp Cinnamon
- 1/2 tsp Salt
- 1 1/2 cups Milk
- 1 cup Pumpkin Puree
- 2 Eggs
- 2 tbsp Oil
Instructions
- In a large bowl, combine flour, baking powder, sugar, brown sugar, pumpkin pie spice, cinnamon, and salt by whisking.
- In a separate bowl, mix milk, pumpkin puree, eggs, and oil until well blended.
- Pour the wet mixture into the dry ingredients and stir gently until just combined. Avoid overmixing to keep pancakes fluffy.
- Preheat a griddle or skillet over medium heat, ensuring it’s well greased with non-stick spray or butter.
- For each pancake, spoon 1/4 cup of batter onto the hot surface and cook until bubbles appear on top; then flip and cook until the bottom is lightly browned.
Notes
Make sure not to overmix the batter to keep pancakes light and airy.
You can replace part of the flour with whole wheat for a healthier option.
Serve with maple syrup or a sprinkle of powdered sugar.
