Ingredients

  • 32 oz. bag tater tots, frozen, not thawed
  • 1 lb. ground beef
  • 1 small yellow onion, diced
  • 1 green bell pepper, diced
  • 1 oz. taco seasoning mix
  • 2/3 cup water
  • 16 oz. sour cream
  • 8 oz. sharp cheddar cheese, divided
  • 1/8 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 tsp. onion powder
  • diced tomatoes
  • bell peppers

Instructions

  1. Spray a 6-quart oval slow cooker with non-stick spray and layer the tater tots evenly on the bottom.
  2. In a large skillet over medium-high heat, brown the ground beef, onion, and bell pepper. Drain any excess fat once the meat is cooked.
  3. Add the specified amount of water from the taco seasoning packet to the meat (typically 2/3 cup). Stir in the taco seasoning and cook until thickened.
  4. Pour the seasoned meat mixture over the tater tots in the slow cooker.
  5. In a medium bowl, mix together the sour cream, salt, pepper, onion powder, and half of the cheddar cheese. Spread this mixture over the meat.
  6. Cover and cook on LOW for 4.5 hours without lifting the lid.
  7. Once cooked, sprinkle the remaining cheddar cheese evenly on top and cover to let it melt for about 5-10 minutes.
  8. To serve, top with diced tomatoes.

Notes

For a spicier version, add diced jalapeños to the meat mixture.
