Ingredients
- 32 oz. bag tater tots, frozen, not thawed
- 1 lb. ground beef
- 1 small yellow onion, diced
- 1 green bell pepper, diced
- 1 oz. taco seasoning mix
- 2/3 cup water
- 16 oz. sour cream
- 8 oz. sharp cheddar cheese, divided
- 1/8 tsp. salt
- 1/4 tsp. pepper
- 1/2 tsp. onion powder

Instructions
- Spray a 6-quart oval slow cooker with non-stick spray and layer the tater tots evenly on the bottom.
- In a large skillet over medium-high heat, brown the ground beef, onion, and bell pepper. Drain any excess fat once the meat is cooked.
- Add the specified amount of water from the taco seasoning packet to the meat (typically 2/3 cup). Stir in the taco seasoning and cook until thickened.
- Pour the seasoned meat mixture over the tater tots in the slow cooker.
- In a medium bowl, mix together the sour cream, salt, pepper, onion powder, and half of the cheddar cheese. Spread this mixture over the meat.
- Cover and cook on LOW for 4.5 hours without lifting the lid.
- Once cooked, sprinkle the remaining cheddar cheese evenly on top and cover to let it melt for about 5-10 minutes.
- To serve, top with diced tomatoes.

Notes
For a spicier version, add diced jalapeños to the meat mixture.
