This Peach Blueberry Cobbler combines sweet peaches and tart blueberries in a buttery crust. It’s an easy, delicious dessert that everyone will love.

Ingredients

  • 4 cups sliced peaches
  • 1 1/2 cups blueberries
  • 1 tablespoon fresh lemon juice
  • 1/4 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1 teaspoon vanilla extract
  • 6 tablespoons unsalted butter
  • 1 cup white whole wheat flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 3/4 cup milk

Instructions

  1. Combine sliced peaches, blueberries, sugar, lemon juice, cinnamon, ginger, and salt in a saucepan over medium heat. Cook for 2-3 minutes until sugar dissolves, stirring often.
  2. Remove from heat and mix in vanilla. Set the fruit filling aside.
  3. Cut the butter into pieces and place them in a 9×13 baking dish. Put it in the oven to melt as you preheat to 350°F.
  4. Meanwhile, in a mixing bowl, combine flour, sugar, baking powder, salt, cinnamon, and ginger. Gradually stir in milk until just combined.
  5. Take out the baking dish from the oven and pour batter over the melted butter, smoothing it out.
  6. Spoon the fruit filling and juices over the batter. Optionally sprinkle turbinado sugar on top and return to the oven.
  7. Bake at 350°F for 35-40 minutes until the top is golden brown and crisp. Let it cool for 5 minutes before serving.

Notes

Serving with vanilla ice cream enhances the flavors.
Allow to cool slightly for easier serving.
Store leftovers in an airtight container at room temperature.
