  • 1 teaspoon espresso powder, optional
  • 1 teaspoon kosher salt
  • 1 1/4 cups chopped chocolate, divided
  • 3/4 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 1 1/4 cups powdered sugar
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon pure vanilla extract
  • 1 tablespoon heavy cream
  • 3 cups puppy chow

Instructions

  1. Preheat the oven to 350°F. Line a 9×13-inch baking pan with parchment paper and lightly grease.
  2. In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth. Add the eggs and vanilla extract, whisking until well combined. Stir in the flour, cocoa powder, espresso powder (if using), and salt until just combined, then fold in 1 cup of chopped chocolate.
  3. Spread the brownie batter evenly into the prepared pan. Sprinkle the remaining ¼ cup chopped chocolate over the top. Bake for 25 to 35 minutes, or until a toothpick comes out with a few moist crumbs. Allow to cool completely in the pan.
  4. In a stand mixer fitted with the paddle attachment, beat the peanut butter and softened butter until smooth. Add the powdered sugar, salt, vanilla extract, and heavy cream, beating until light and fluffy.
  5. Spread the peanut butter frosting over the cooled brownies, then sprinkle puppy chow evenly on top, pressing gently to adhere.
  6. Cut into squares and serve.

Ensure the brownies are completely cooled before adding the frosting for a better texture.
