  • 5 cups peaches, sliced
  • 1/2 cup sugar
  • 2 tbsp cornstarch
  • 1/2 tsp vanilla
  • 1 tbsp lemon juice
  • 1/2 cup flour
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 cup butter, cold & cubed
  • 3/4 cup old-fashioned rolled oats

Instructions

  1. Preheat the oven to 350 degrees and prepare a pie pan with non-stick spray.
  2. Pit, peel, and slice the peaches to measure 5 cups; place them in a medium bowl.
  3. Combine the peaches with sugar, cornstarch, vanilla, and lemon juice, stirring well.
  4. Transfer the peach mixture into the prepared pie pan.
  5. In a food processor, pulse together the flour, brown sugar, and cinnamon. Then add the cold, cubed butter until crumbs form. Finally, gently mix in the rolled oats.
  6. Spread the crumb mixture evenly over the peaches in the pan.
  7. Bake for 30-35 minutes, or until topping is golden brown.
