- 2 pounds boneless skinless chicken thighs
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1/2 yellow onion diced (about 1/4 cup)
- 3 cloves garlic minced
- 1 teaspoon italian seasoning
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1 1/2 cup chicken broth
- 1 teaspoon grainy mustard
- 3/4 cup heavy cream
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
Instructions
- Sprinkle chicken thighs on both sides with italian seasoning, salt, and pepper.
- In a large skillet, melt butter and olive oil over medium-high heat.
- Add diced onion and garlic; sauté for about 2 minutes.
- Move the onions and garlic to the side of the pan and add the seasoned chicken thighs.
- Sauté the chicken thighs for about 2-3 minutes on each side until browned.
- Transfer the contents of the pan to the slow cooker.
- Pour in the chicken broth.
- Cover and cook on low for 5-7 hours or high for 3-4 hours.
- Once done, remove chicken thighs and keep warm.
- In the slow cooker, whisk in the cream, mustard, and lemon juice until combined.
- To thicken the sauce, pour it into a small saucepan and whisk in cornstarch.
- Bring to a boil for 2-3 minutes until thickened to desired consistency.
- Season sauce with additional salt and pepper to taste.
- Pour sauce over the chicken and serve.
Notes
For added flavor, consider marinating the chicken thighs prior to cooking.
You can adjust the thickness of the sauce by modifying the amount of cornstarch used.
Serve with rice or noodles to enjoy the sauce.
