Ingredients

  • 3 pounds apples honeycrisp, gala, fuji, or a mix, peeled and sliced
  • ¼ cup apple juice
  • 2 tablespoons maple syrup
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • pinch of salt
  • ½ teaspoon vanilla extract
  • 1 tablespoon tapioca flour or cornstarch mixed with 1 tablespoon water

Instructions

  1. Place the sliced apples in the slow cooker.
  2. Add the apple juice, followed by sprinkling the maple syrup, cinnamon, nutmeg, and salt over the apples. Stir gently to combine.
  3. Cover and cook on low for 3-4 hours or high for 1.5-2 hours, until the apples are tender but retain their shape.
  4. Stir once halfway through the cooking time if possible.
  5. Once the apples are done, stir in the vanilla and the tapioca slurry, then let it heat for an additional 5-10 minutes.
  6. Stir and serve warm, or allow the apples to cool before storing in the fridge or freezer.
