Ingredients
- 3 cups cut broccoli
- 9 eggs
- 3/4 tsp salt
- 1/4 tsp pepper
- 1/4 tsp onion powder
- 8 oz cream cheese
- 2 cups shredded colby jack cheese, divided
Instructions
- Bring a large pot of water to a boil. Add the broccoli and cook for 3 minutes, then drain and rinse with cold water. Set aside.
- In a large bowl, combine the eggs, salt, pepper, onion powder, and cream cheese. Using an electric mixer, beat on medium speed until well combined, leaving some chunks of cream cheese if desired.
- Spray the slow cooker with non-stick spray. Spread the broccoli evenly on the bottom, then sprinkle with 1/2 cup of the colby jack cheese. Pour the egg mixture on top.
- Cover and cook on HIGH for 2 hours and 15 minutes. Avoid lifting the lid during cooking.
- Once cooking time is complete, sprinkle the remaining cheese on top, cover again, and let the cheese melt for about 10 minutes.
- Serve and enjoy your quiche!
Notes
For best results, ensure the broccoli is blanched properly before adding it to the slow cooker.
