- 1 pound boneless skinless chicken breasts
- 8 ounce can water chestnuts
- 1/4 cup soy sauce
- 1/4 cup honey
- 2 tablespoons blackberry jam seedless
- 1 tablespoon cornstarch
- 2 teaspoons minced garlic
- 1/2 teaspoon chili garlic sauce
- 1/2 teaspoon garlic powder
Instructions
- Cut the chicken into small pieces using a sharp knife.
- Drain and finely dice the water chestnuts.
- Place the chicken and water chestnuts into the slow cooker.
- In a small bowl, whisk together the sauce ingredients: soy sauce, honey, blackberry jam, cornstarch, minced garlic, chili garlic sauce, and garlic powder.
- Pour the sauce over the chicken mixture in the slow cooker.
- Cook on low for 6-8 hours or high for 3-4 hours.
Notes
Feel free to adjust the spice level by adding more or less chili garlic sauce.
Serve with rice or noodles to soak up the delicious sauce.
Leftovers can be stored in the refrigerator for up to 3 days.
