Ingredients

  • 1 1/2 pounds pork tenderloin
  • 3 strips bacon cooked crispy
  • 4 ounces goat cheese sliced or crumbled
  • 1 tablespoon honey
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 6 tablespoons butter
  • 1/2 cup apricot preserves
  • 1/2 teaspoon dried sage
  • 1/2 teaspoon salt

Instructions

  1. Cook the bacon strips in the microwave for about 1 minute per slice until crispy or use your preferred cooking method.
  2. Drain the cooked bacon and let it cool.
  3. Place the pork tenderloin on a cutting board and butterfly it by slicing lengthwise down one side, starting at one-third of its thickness but not slicing all the way through the other side.
  4. Open the pork to lay it flat like a pamphlet and slice the remaining third in half, but do not cut all the way through.
  5. Lay the bacon strips, goat cheese, and honey down the center of the pork, then roll it tightly.
  6. Secure the rolled pork with cooking twine or toothpicks.
  7. Place the tenderloin in a slow cooker and sprinkle with thyme, salt, and pepper.
  8. Cook on low for 6-8 hours, until the pork is fully cooked.

Notes

For extra flavor, try adding your favorite herbs or spices when sprinkling on the tenderloin.
Make sure to check the internal temperature of the pork for safety; it should reach 145°F (63°C).
Feel free to substitute the goat cheese with another cheese if preferred.
