These Plum Bars offer a delightful blend of sweet and tart flavors, thanks to the juicy plums and buttery crust. Perfect for a quick dessert that feels indulgent without the fuss.

Ingredients

  • 1 ¾ cup all purpose flour
  • ⅔ cup sugar
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup butter, cold
  • 1 egg, whisked
  • 2 tbsp milk
  • 4 plums, diced small
  • ¼ cup sugar
  • 2 tbsp all purpose flour
  • ½ tsp vanilla extract

Instructions

  1. Preheat your oven to 400° F and line an 8×8 baking dish with parchment paper.
  2. In a large bowl, mix together the flour, sugar, baking powder, and salt. Grate the cold butter directly into the bowl using a cheese grater.
  3. Combine the ingredients by hand until the butter resembles small pebbles. Add the whisked egg and milk, stirring until well combined.
  4. In a separate medium bowl, combine the diced plums, additional sugar, flour, and vanilla extract, mixing gently.
  5. Press ⅔ of the crust mixture into the bottom of the lined baking dish to form the base.
  6. Pour the plum mixture evenly over the crust in the baking dish. Sprinkle the remaining crust mixture over the top.
  7. Bake in the preheated oven for 30-32 minutes or until the edges are golden brown. Allow to cool, slice, and serve.

Notes

For a twist, consider adding a sprinkle of cinnamon to the plum filling.
These bars can be stored in an airtight container for up to 3 days.
Serve with a scoop of vanilla ice cream for an extra treat.
